Nanaji's scrambled egg curry

 
 

I’m a big fan of simple recipes. So when my dad showed me this egg recipe, I immediately loved our versatile it is. For the most part, use whatever ingredients and spices you have. This recipe is a difficult one to mess up.

Feel free to add in whatever you have in the kitchen.



 
 

Ingredients:

  • 1 red onion

  • 2 roma tomatoes

  • 3-4 red or green chilis (green thai chilis are hotter than dry red ones)

  • 4-6 eggs, whisked together

  • 1-2 tablespoon ginger garlic paste (3-4 cloves of garlic crushed if you don’t have ginger garlic paste, but ginger garlic paste is highly recommended)

  • 3-4 cloves

  • 1-2 cinnamon sticks

  • 3-4 pods of cardamom

  • 1-2 tablespoon garam masala

  • ± handful of spinach

  • ± ground turkey/beef

  • ± green onions

  • ± handful of mint


Directions:

  1. This is the easy part.

  2. heat 2-3 tablespoon olive/vegetable oil in a heavy bottom pot/pan and fry the onions, tomatoes, and chilis

  3. Add the rest of the ingredients.

  4. mix and stir until the eggs are set or ground meat (if added) is done.

I haven’t made this recipe myself yet, but it was a staple when I was growing up.
